PUMPKIN CHOCOLATE CHIP COOKIES
Coshalmbine:
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
Mix together in a separate bowl:
2 cups all purpose flour
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
Dissolve:
1 tsp. milk in 1 tsp. baking soda and stir into pumpkin mixture.
Mix well:
flour mixture and pumpkin mixture.
Add:
1 Tb. vanilla
2 cups chocolate chips
1/2 cup chopped walnuts (opt'l.)
The dough will be sticky but will hold together smoothly.
Drop by spoonful on a greased cookie sheet.
Bake at 350 degrees for about 10 minutes or until slightly brown and firm.
Makes 24 cookies.
These cookies are very moist and yummy! They are so moist that they will stick together if you stack them or put them in a jar. Because of this I don't recommend doubling the batch unless there are plenty of people to eat them within a day or so.
For a lower fat and drier version that will store longer substitute equal amounts of applesauce for the oil.
You can also add more pumpkin pie spices such as nutmeg, cloves, and ginger if you like.

Oh happy day!!! I love chocolate chip pumpkin cookies. My mom didn't bake a lot, but when she did, she made the best pumpkin bars and chocolate chip pumpkin cookies. I haven't been able to locate her recipe for the cookies and thought I would never have them again. You saved the day!!

Nope, Ted didn't wear a Quicksilver shirt to the temple! He wasn't able to get off work in time to make it to the session we were attending, so we just had him meet us at the restaurant afterward. :)
